  • 1 cup almond milk
  • 1/2 cup sugar
  • 1/4 cup vegan butter
  • 1 packet instant yeast
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons almond milk (for icing)
  • 1 teaspoon vanilla extract
  • 1 tablespoon beet juice (for color)

Instructions

  1. In a bowl, mix warm almond milk and yeast; let it sit for 5 minutes.
  2. Add melted vegan butter, sugar, and salt; stir well.
  3. Gradually add flour and knead until smooth.
  4. Cover dough and let rise for an hour.
  5. Roll out dough, spread vegan butter, sprinkle sugar and cinnamon.
  6. Roll tightly, slice into rolls, and place in a baking dish.
  7. Let rolls rise for another 30 minutes.
  8. Bake at 350°F (175°C) for 25 minutes.
  9. Mix powdered sugar, almond milk, vanilla, and beet juice for icing.
  10. Drizzle icing over warm cinnamon rolls.
