  • 1 cup coconut milk
  • 1 large egg
  • 2 tablespoons melted butter

  • 1/4 cup shredded coconut

Instructions

  1. In a bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the coconut milk, egg, melted butter, and vanilla extract.
  3. Combine the wet and dry ingredients, stirring until just mixed.
  4. Fold in the shredded coconut.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of the batter for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with syrup or additional shredded coconut.

Notes

  • For extra flavor, try adding chopped pineapple to the batter.
