These sushi cups are a fun and creative way to enjoy sushi at home. Perfect for parties or a family dinner, they’re easy to make and delicious!

Ingredients

  • 1 cup sushi rice
  • 2 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 sheets nori seaweed
  • 1/2 pound fresh salmon, diced
  • 1/2 cucumber, thinly sliced
  • 1 avocado, sliced
  • 1 tablespoon soy sauce

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine rice and water, then bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  3. Remove from heat and let sit, covered, for 10 minutes.
  4. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then stir into the cooked rice.
  5. Cut the nori sheets into quarters and place each piece into a muffin tin to form cups.
  6. Stuff the cups with sushi rice, then layer in diced salmon, cucumber, and avocado.
  7. Drizzle with soy sauce before serving.
