12 large jumbo pasta shells
1 tablespoon olive oil
2 cups fresh spinach, chopped
1 cup ricotta cheese
1 cup mozzarella cheese, shredded
1/2 cup grated Parmesan cheese
1 egg
2 cups marinara sauce
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Cook the pasta shells according to package instructions until al dente; drain and set aside.
In a large skillet, heat olive oil over medium heat. Add spinach and sauté until wilted.
In a mixing bowl, combine sautéed spinach, ricotta cheese, half of the mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well.
Stuff each shell with the spinach and ricotta mixture.
Spread some marinara sauce on the bottom of a baking dish. Place the stuffed shells in the dish and cover with remaining marinara sauce.
Sprinkle the remaining mozzarella on top.
Bake for 25-30 minutes or until heated through and the cheese is bubbly.
Notes
For extra flavor, add fresh herbs to the filling.
Feel free to substitute cottage cheese for ricotta if preferred.
