1 cup sushi rice
2 cups water
1 pound fresh salmon fillet
1 tablespoon soy sauce
2 tablespoons mayonnaise
1 tablespoon Sriracha sauce
2 green onions, chopped
1 sheet nori, cut into strips
1 avocado, sliced
Instructions
Preheat your oven to 350°F (175°C).
Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer’s instructions.
In a bowl, mix the cooked salmon, soy sauce, mayonnaise, and Sriracha until well combined.
Once the rice is cooked, lay it in an even layer in a greased baking dish.
Spread the salmon mixture over the rice and top with green onions and nori strips.
Bake in the preheated oven for about 20 minutes or until heated through.
Remove from the oven and garnish with avocado slices before serving.
Notes
Feel free to adjust the amount of Sriracha for spice preference.
