A delightful recipe for smashed carrots featuring turkey bacon.

Ingredients

  • 1 pound carrots
  • 4 strips turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the carrots into large chunks.
  3. Boil carrots in salted water until tender, about 15 minutes.
  4. Drain the carrots and place them on a baking sheet.
  5. Smashed the carrots with a fork or masher.
  6. Drizzle with olive oil, season with salt and pepper.
  7. Chop turkey bacon and sprinkle on top.
  8. Bake for 20 minutes or until edges are crispy.
  9. Garnish with parsley before serving.
