1 pound shrimp, peeled and deveined
12 ounces penne pasta
4 tablespoons butter
4 cloves garlic, minced
1 teaspoon red pepper flakes
1 cup heavy cream
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Cook the penne pasta according to package instructions until al dente, then drain.
In a large skillet, melt the butter over medium heat. Add the garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
Add the shrimp and cook until pink and opaque, about 4-5 minutes.
Stir in the heavy cream and Parmesan cheese, mixing well.
Add the cooked pasta and half of the mozzarella cheese, and mix until combined.
Transfer the mixture to a baking dish, top with the remaining mozzarella cheese and parsley.
Bake for 25-30 minutes, or until bubbly and golden.
Notes
For added flavor, you can include lemon zest or a splash of white wine in the sauce.
Feel free to substitute shrimp with chicken or vegetables.
