A delightful dish featuring eggs poached in a flavorful spiced tomato sauce, perfect for breakfast or brunch.

Ingredients

  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 oz) crushed tomatoes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper, cooking until soft.
  3. Stir in garlic, cumin, and paprika, cooking until fragrant.
  4. Add crushed tomatoes and simmer for 10 minutes.
  5. Create wells in the sauce and crack the eggs into them.
  6. Cover and cook until the eggs are set.
  7. Season with salt and pepper, and garnish with parsley before serving.

Notes

  • Serve with crusty bread to soak up the sauce.
