  • 1 cup fresh spinach
  • 1/2 cup roasted red peppers, chopped
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix spinach, roasted red peppers, and mozzarella.
  3. Slice the chicken breasts to create pockets, and stuff them with the mixture.
  4. Rub the outside with olive oil and season with garlic powder and salt.
  5. Place stuffed chicken in a baking dish and bake for 25-30 minutes until cooked through.
