Ingredients

  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 pre-baked pie crust

Instructions

  1. Blend pistachios in a food processor until finely ground.
  2. In a saucepan, combine sugar, cornstarch, and salt.
  3. Gradually whisk in milk and bring to a simmer over medium heat.
  4. In a separate bowl, whisk egg yolks and temper with hot milk mixture.
  5. Return mixture to saucepan, stirring continuously until thickened.
  6. Remove from heat and stir in vanilla and ground pistachios.
  7. Pour custard into the pie crust and refrigerate until set.

Notes

  • For a stronger pistachio flavor, use a bit more ground pistachios.
  • This pie can be made a day in advance for better flavor development.
