  • 4 pieces chicken thighs
  • 2 cups rice
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 3 cloves garlic, minced
  • 1 bunch cilantro
  • 1-2 jalapeños, seeds removed
  • 1 tablespoon lime juice

Instructions

  1. Season the chicken thighs with cumin, paprika, and salt.
  2. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned.
  3. Remove chicken and add rice, stirring for a minute.
  4. Add chicken broth and bring to a boil. Reduce heat, cover, and simmer for 18-20 minutes.
