This Moroccan Chicken and Rice recipe is an easy and flavorful meal perfect for any weeknight dinner.

  • 1 pound chicken thighs
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • 1 cup carrots, diced
  • 1 cup raisins
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until soft.
  2. Add chicken thighs, browning on all sides.
  3. Stir in cumin, cinnamon, turmeric, salt, and pepper.
  4. Add rice, chicken broth, carrots, and raisins to the pot.
  5. Bring to a simmer, cover, and cook for 20 minutes or until rice is tender.
  6. Fluff rice and serve warm.
