1 medium spaghetti squash
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 can (15 oz) crushed tomatoes
1 teaspoon Italian seasoning
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Instructions
Preheat the oven to 400°F (200°C).
Cut the spaghetti squash in half and scoop out the seeds.
Drizzle with olive oil, salt, and pepper, then roast in the oven for 40-50 minutes, until tender.
In a saucepan, combine crushed tomatoes, garlic powder, and Italian seasoning. Simmer for 10 minutes.
Once the squash is done, use a fork to scrape the insides into strands.
Mix the spaghetti squash strands with the sauce and ricotta cheese.
Transfer the mixture to a baking dish, sprinkle mozzarella and Parmesan on top.
Bake for 20 minutes, until cheese is bubbly and golden.
