  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 can (15 oz) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Drizzle with olive oil, salt, and pepper, then roast in the oven for 40-50 minutes, until tender.
  4. In a saucepan, combine crushed tomatoes, garlic powder, and Italian seasoning. Simmer for 10 minutes.
  5. Once the squash is done, use a fork to scrape the insides into strands.
  6. Mix the spaghetti squash strands with the sauce and ricotta cheese.
  7. Transfer the mixture to a baking dish, sprinkle mozzarella and Parmesan on top.
  8. Bake for 20 minutes, until cheese is bubbly and golden.
