Ingredients

  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 2 cups fresh spinach
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Pour in chicken broth and add diced tomatoes, basil, and oregano.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add spinach and crumbled turkey bacon back to the pot; cook for an additional 5 minutes.
  6. Season with salt and pepper before serving.

Notes

  • Feel free to add any other vegetables you like.
  • Serve with crusty bread for a more filling meal.
