  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the almond flour, baking soda, and salt.
  3. In another bowl, combine the applesauce, melted coconut oil, honey or maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the dark chocolate chips if using.
  5. Drop spoonfuls of the cookie dough onto the prepared baking sheet.
  6. Bake for 10-12 minutes or until slightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
