Ingredients

  • 2 pounds ripe tomatoes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 cups vegetable broth
  • 1 teaspoon sugar
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the tomatoes, onion, and garlic on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast for 30-35 minutes or until the tomatoes are caramelized.
  5. Transfer the roasted vegetables to a pot and add the vegetable broth.
  6. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  7. Blend the soup until smooth using an immersion blender.
  8. Stir in sugar and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh basil.
