1 cup fresh raspberries
2 cups mascarpone cheese
1 cup heavy cream
3/4 cup granulated sugar
1 cup brewed espresso, cooled
1 teaspoon vanilla extract
24 ladyfingers
2 tablespoons cocoa powder
Instructions
In a mixing bowl, whip the heavy cream until stiff peaks form.
In another bowl, combine mascarpone cheese, sugar, and vanilla extract until smooth.
Gently fold the whipped cream into the mascarpone mixture.
Dip ladyfingers briefly in the cooled espresso, then layer them in a serving dish.
Spread half of the mascarpone mixture over the ladyfingers, then layer half of the raspberries on top.
Repeat the layers with the remaining ingredients.
Chill in the refrigerator for at least 4 hours before serving.
Before serving, dust with cocoa powder and garnish with extra raspberries.
Notes
For best results, use fresh raspberries that are fully ripe.
You can substitute the espresso with strong coffee if desired.
