A deliciously simple casserole that combines sweet potatoes, eggs, and savory meats for a hearty breakfast or brunch.

  • 2 cups sweet potatoes, peeled and diced
  • 6 eggs
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup chicken ham, chopped
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine sweet potatoes, eggs, turkey bacon, chicken ham, milk, salt, pepper, garlic powder, and onion powder.
  3. Pour the mixture into a greased baking dish.
  4. If desired, sprinkle shredded cheese on top.
  5. Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
  6. Allow to cool slightly before slicing and serving.
