  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces dark chocolate, melted
  • 1 cup cherries, pitted and halved

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine chocolate cookie crumbs and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla, mixing until well combined.
  4. Stir in melted dark chocolate until evenly blended.
  5. Fold in cherries, then pour the mixture over the crust.
  6. Bake for 45 minutes or until the center is set. Let cool before refrigerating for at least 4 hours.
