Crispy Bang Bang Salmon Bites Bowls are the perfect easy and delicious weeknight meal.

Ingredients

  • 1 pound salmon fillets
  • 1 cup panko breadcrumbs
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 2 tablespoons honey
  • 2 cups cooked rice
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix mayo, sriracha, and honey in a bowl.
  3. Coat salmon in the mixture and then dip in panko breadcrumbs.
  4. Place salmon on a baking sheet and bake for 12-15 minutes.
  5. Steam broccoli and toss with soy sauce and sesame oil.
  6. Serve salmon bites over rice with broccoli on the side.

Notes

  • For extra crunch, broil the salmon bites for an additional 2 minutes.
  • Try adding avocado for creaminess.
