  • 1 cup sushi rice
  • 2 cups water
  • 1/4 cup sugar
  • 2 tablespoons rice vinegar
  • 1 cup strawberries, sliced
  • 1 cup whipped cream
  • 1/4 cup shredded coconut
  • 4 sheets nori

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the sushi rice and water, then bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  3. In a separate bowl, mix the sugar and rice vinegar until dissolved, then stir into the cooked rice.
  4. Let the rice cool to room temperature.
  5. Place a sheet of nori on a bamboo mat. Spread a thin layer of rice on the nori, leaving space at the edges.
  6. Add a layer of sliced strawberries and whipped cream on the rice.
  7. Carefully roll the mat, pressing gently to form a log. Seal the edge with a little water.
  8. Slice the roll into bite-sized pieces and sprinkle with shredded coconut.
  9. Repeat with remaining ingredients.
