A delicious and indulgent creamy Tuscan salmon dish that can be prepared in just 30 minutes, perfect for a quick dinner.

Ingredients

  • 2 fillets salmon
  • 1 tablespoon olive oil
  • 2 cups spinach
  • 1 cup cherry tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon fillets with salt and pepper, then add to the skillet, cooking for about 4-5 minutes on each side until cooked through.
  3. Remove salmon and set aside.
  4. In the same skillet, add minced garlic and sauté until fragrant.
  5. Add spinach and cherry tomatoes, cooking until spinach wilts.
  6. Stir in heavy cream, parmesan cheese, and Italian seasoning; let it simmer.
  7. Add salmon back into the skillet to coat with the creamy sauce.
  8. Serve immediately.
