1 pound rotini pasta
2 cups corn kernels
1 cup cherry tomatoes, halved
1/2 cup red onion, diced
1 cup mayonnaise
1/4 cup sour cream
2 tablespoons lime juice
1 teaspoon chili powder
Salt and pepper to taste
1/4 cup fresh cilantro, chopped
Instructions
Cook the rotini pasta according to package instructions. Drain and set aside to cool.
In a large bowl, combine the corn, cherry tomatoes, red onion, mayonnaise, sour cream, lime juice, and chili powder.
Add the cooled pasta to the bowl and mix until everything is well coated.
Season with salt and pepper to taste.
Fold in the chopped cilantro before serving.
Notes
