4 salmon fillets
1 cup pomegranate juice
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup pomegranate seeds
2 tablespoons fresh parsley, chopped
Instructions
Preheat the oven to 400°F (200°C).
In a saucepan, combine pomegranate juice, honey, soy sauce, Dijon mustard, garlic powder, salt, and pepper. Bring to a boil, then reduce to a simmer until thickened.
Place salmon fillets on a baking sheet and brush with the pomegranate glaze.
Bake for 12-15 minutes, or until the salmon flakes easily with a fork.
