  • ½ cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup sour cream
  • ¼ cup all-purpose flour
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese until smooth, then add sugar and mix until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla and almond extracts, sour cream, and flour until just combined.
  6. Pour cream cheese mixture over the crust in the springform pan.
  7. Bake for 60 minutes or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  9. Remove from oven, let cool to room temperature, then refrigerate for at least 4 hours before serving.
  10. Whip heavy cream and serve on top of the cheesecake before slicing.
