A delicious twist on the classic Wellington, featuring tender chicken and flavorful turkey bacon.

  • 2 chicken breasts
  • 4 slices turkey bacon
  • 1 cup mushrooms, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 package puff pastry
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pan, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  3. Add mushrooms and sauté until they are soft. Season with salt and pepper.
  4. Wrap each chicken breast with turkey bacon.
  5. Lay the puff pastry on a floured surface, place filled chicken in the center and fold the pastry over.
  6. Brush the top with beaten egg.
  7. Bake for 25-30 minutes or until pastry is golden brown.
  8. Let it rest for 10 minutes before slicing.
