  • 1 pound chicken thighs, boneless and skinless
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups hominy, drained and rinsed
  • 1 cup tomatillos, husked and chopped
  • 1 jalapeño, seeded and chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • salt to taste
  • garnishes: radishes, cilantro, avocado, lime

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chicken and cook until browned on all sides.
  2. Add the chopped onion and garlic, cooking until softened.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the hominy, tomatillos, jalapeño, cumin, and oregano. Reduce heat and simmer for 30 minutes.
  5. Season with salt to taste and serve hot, garnished with radishes, cilantro, avocado, and lime.
