  • 4 boneless, skinless chicken breasts
  • 8 slices turkey bacon
  • 4 slices Swiss cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Flatten the chicken breasts to about 1/2 inch thick.
  3. Layer turkey bacon and Swiss cheese on each chicken breast.
  4. Roll up the chicken breasts and secure with toothpicks.
  5. Dredge each roll in flour, dip in beaten eggs, then coat with breadcrumbs.
  6. Heat olive oil in a skillet over medium heat, and sear the chicken rolls on all sides.
  7. Transfer the chicken rolls to a baking dish and bake for 25-30 minutes until cooked through.
