  • ⅓ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup cherry pie filling
  • ½ cup shelled pistachios, chopped

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla extract, mixing well.
  4. Add eggs one at a time, mixing on low speed until just combined. Do not overmix.
  5. Fold in sour cream, cherry pie filling, and chopped pistachios.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.
