2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 cups cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
3 cups apples, peeled and diced
1/2 cup caramel sauce
1 teaspoon cinnamon
Instructions
Preheat your oven to 350°F (175°C).
In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a greased baking pan.
In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
Stir in the vanilla extract and pour the mixture over the crust.
In another bowl, mix diced apples, caramel sauce, and cinnamon. Spoon the apple mixture over the cheesecake layer.
Bake in the preheated oven for 30-35 minutes or until the center is set.
Allow to cool completely before slicing into bars.
Notes
For extra flavor, drizzle caramel sauce on top of the bars before serving.
