  • 1 cup nuts
  • 1 cup bourbon or rum
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Soak the mixed dried fruit and nuts in bourbon or rum overnight.
  3. In a mixing bowl, cream together butter and brown sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract.
  6. In another bowl, combine flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture, followed by the soaked fruits and nuts.
  8. Pour the batter into a prepared cake pan and bake for 60-70 minutes.
  9. Let cool before slicing.
