Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh thyme, chopped
  • 1 medium beet, roasted and pureed
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix flour and eggs into a dough. Knead for 10 minutes and let it rest.
  2. In another bowl, combine ricotta, Parmesan, thyme, beet puree, salt, and pepper.
  3. Roll out the dough and cut into heart shapes.
  4. Fill half of the hearts with the ricotta mixture, then cover with the other half and seal.
  5. Boil ravioli until they float, about 3-4 minutes.
  6. Serve with olive oil or browned butter.
