Beef and Cheese Stuffed Sweet Potatoes

  • 4 large sweet potatoes
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  4. Add ground beef, cumin, paprika, salt, and pepper. Cook until the beef is browned.
  5. Once sweet potatoes are done, slice them in half and scoop out a bit of the flesh.
  6. Mix the sweet potato flesh with the beef mixture and stir in shredded cheese.
  7. Stuff the mixture back into the sweet potato skins and top with additional cheese if desired.
  8. Return to the oven for 10-15 minutes until cheese is melted and bubbly.

Notes

  • For added flavor, try adding some diced jalapeños or bell peppers to the beef mixture.
