  • 2 ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, mash the bananas and stir in the buttermilk and vanilla.
  5. Combine the dry ingredients and gradually add to the wet mixture, mixing just until combined.
  6. Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
  7. Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the frosting, beat together the butter, powdered sugar, and spices until smooth.
  9. Once the cakes are cool, spread the frosting between the layers and on top of the cake.
