- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 2 cream cheese blocks
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups apples, peeled and diced
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of mini cheesecake pans.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust.
- In a separate bowl, combine diced apples, cinnamon, and brown sugar.
- Top the cheesecake mixture with the apple mixture.
- Bake for 20-25 minutes or until set. Allow to cool.
