Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cream cheese blocks
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crust.
  7. In a separate bowl, combine diced apples, cinnamon, and brown sugar.
  8. Top the cheesecake mixture with the apple mixture.
  9. Bake for 20-25 minutes or until set. Allow to cool.
